Every year the Kiwis and Aussies celebrate AnzacDay. Anzacstands for Australia and New Zealand Army Corps. During WWI men from these two countries went to Turkey to fight in the war and April 25th is set aside each year for those men who honorably served.
Our favorite part of the day were these yummy Anzac cookies. These cookies were made with love from the people on the home front and shipped to the men in the war.
Here is the delicious recipe:
1 c Flour
1 c Rolled oats
3/4 c Finely shredded coconut
1 c Sugar
1/2 c Butter
1 tb Maple syrup
1 1/2 ts Baking soda
2 tb Boiling water
1. Preheat oven to 350°. Grease cookie sheets; set
aside.
2. Combine flour, oats, coconut and sugar.
3. Melt butter with maple syrup over very low heat
to avoid scorching.
4. Combine baking soda and water. Add to butter
mixture; stir into flour, mixing well.
5. Drop by heaping teaspoonfuls 2" apart on
sheets. Bake 20 mintues. Remove from sheets and
cool on racks.

you are so cute with this post. those cookies do look yummy. i hope you don't have to serve in the military to get a batch of them sent to you. (hint hint) we are moving out on the 10th of May. will you be back by then?
